Chicken Boti Biryani

Biryani is liked everywhere in South Asia, specially chicken biryani. Whenever biryani is being cooked in

Ingredients:

  • 2 chicken breasts (boneless and skinless)
  • 1 ½ cup soaked rice
  • Salt to taste
  • ½ tspn chicken powder
  • 1 tbspn lemon juice
  • 1 medium sized potato block sliced
  • 1 tspn coriander powder
  • 1 tspn ground garam masala
  • 1 ½  tspns red chilli powder
  • 2 dried plums
  • A pinch of Funnel seed powder
  • 2 green chillies chopped
  • 2 green chillies
  •  3 – 4 curry leaves
  • ¼ tspn turmeric powder
  •  3 tbspns yogurt
  • 1 tbspn vinegar
  • Plenty of water
  • 4 tbspns oil
  • An onion
  • 1 tbspn grated ginger
  • ½ tspn garlic paste
  • Few drops Yellow Food colour (in water)
  • 4 cloves
  • 1 tspn coconut powder
  • 4 black peppercorns
  • 1 cardamom pod
  • ½ tspn cumin seeds
  • 2 big cardamom pods
  • 2 inch stick of cinnamon
  • 2 tomatoes

Procedure:

-Cut chicken into cubes and marinade them in vinegar and a little amount of yellow Food colour and yogurt For at least an hour or so.

-Heat oil in a thick base pan and Fry onions till they are golden brown, then add ginger and garlic in them and stir Fry, now add all the spices and tomatoes and make a Fine masala For chicken botis. Add water if needed. Cook potatoes in this masala till they are cooked but do not let them loose their shape.  

-Now add marinated chicken pieces in this masala and cook well. Add water only if it is necessary.

-Cook chicken boti masala, not curry or gravy, make it thick and add chopped green chillies in it.

-Boil rice in plenty of water and when they are 95% cooked drain them.

-Now make a layer of chicken boti masala and then of rice, then of boti masala and then some rice.

-Mix some yellow Food colour in water and sprinkle it on rice, and cook it For 5 – 6 minutes on low heat or until rice are cooked.

-Now mix them and serve them hot with salad and raita.

Outcome:

Tasty and desi chicken boti biryani is ready to be served.

Tips:

-Do not overcook the rice, maintain their shape and size.

-When draining water From rice, make sure rice are dry.

-Do not add much yellow Food colour; add a little amount of that.

Servings:

This will serve 4 persons.

Vanilla Butter Cookies

These are one of my Favourite cookies, people really appreciate my cooking and baking skills when i make
them …

Ingredients:

  • 3 eggs
  • 3 cups Flour
  • 2 tspns vanilla essence
  • 1 cup soft butter
  • 1 tspn baking powder
  • 1 cup sugar
  • Some oil For glazing

Procedure:

-Heat oven to 180 degrees.

-Beat eggs thoroughly. Now add sugar and butter and mix again.

-Sift Flour and baking powder.

-Now add vanilla essence and Flour mixture. Use your hands to knead. Make soft dough and keep it aside For 15 minutes.

-Now roll it with a rolling pin (1/4 inches thickness) and use heart cutters to make small  cookies.

-Now glaze a pan with some oil and place these small cookies on it. (Leave some distance between them).

-Place it on the middle rack in a preheated oven and bake For 10 minutes until golden brown.

-Take them out and keep it aside For 20 – 25 minutes to make them crisp.

-Now add them in an air tight jar and serve them with tea whenever its needed.

Outcome:

Tasty vanilla cookies are ready to be served.

Tips:

-After baking, do keep them aside For some time so that they get crisp.

Servings:

This will serve 40 – 50 persons.
