Aalu Paratha (For Beginners)

Paratha is one of the favourite dishes of Punjab. Punjabis feel their breakfast incomplete without parathas and lassi. Its a nutritious meal but a little fattening, so just try it and add it to your meal schedule on weekly basis.

Ingredients:

  • Oil for frying
  • Loose whole wheat flour

FOR FILLING:

  • 3 boiled potatoes
  • Salt add to taste
  • Red chilli powder ½ tspn
  • A pinch of turmeric powder
  • 3-4 sliced green chillies
  • ½ onion thinly sliced
  • ½ tspn ground hot spices
  • 1 tbspn olive oil
  • ½ tspn chicken stock powder
  • 3 tbspn Coriander leaves (optional)

DOUGH:

  • 2 cups Whole wheat flour (aataa)
  • 1 cup lukewarm water
  • 2 tbspns olive oil

 

Procedure:

-Mash potatoes and add salt, red chilli powder, turmeric powder, green chillies, onion, ground hot spices, olive oil, chicken stock powder and coriander leaves ( if you want to) and mix well.

-Now gradually add water to whole wheat flour and make a dough out of it. Add olive oil. Knead it well and put aside for 20 minutes.

-After 20 minutes make small balls out of it and if it is sticking to your hands use loose whole wheat flour. You can make 5 pairs of balls out of it.

-Now with the help of a roller, on a flat surface flat these balls and make small, thick chapattis.

-Put some filling in the middle of one chapatti and put the other chapatti on the top of it.

-By the help of your fingers press the sides of the two chapattis to make one with the filling inside. With your fingers press them and make them thin.

-Use roller to make it more flat and thin. Use loose wholewheat flour if it is sticking to the surface, roller or your hands.

-When it becomes flat put it on a heated flat pan.

-Now turn over the side and put some oil/ghee/butter on it, so that it can become oily and red from both sides.

-Keep on changing the sides till they both are brown.

-Do the same thing with other chapattis and make 5 parathas.

-Serve them with butter/fried egg/omelate and lassi.

Outcome:

Your Punjabi parathas are ready.

Tips:

-Use loose wholewheat flour whenever the dough is sticking.

-Mostly use your fingers to make the parathas flat.

-Don’t forget to press and join the two chapattis from the ends after putting the mixture.

-Do not put mixture on the sides of chapattis

-Use less oil for frying, do not make it much oily.

-Boil potatoes to their extreme.

Servings:

This will serve 5 children or 5 adults.

-Divide Dough into ten equal portions.

-Take one and make a kiwi Fruit sized ball, roll it like a chapatti and spread one tbspn of ghee on it. Now very gently, Roll this wrap into a snake, Folding ghee side in.

-Now with your hands roll this snake and make a thin, big snake.

-Give it a coral, spiral shape, like in the picture below,

-And press with your Fingers. Like this,

-Roll this with a rolling pin and dust with some Flour wherever needed but avoid using lots of Flour.

-Roll it into a chapatti and place it on hot Flat pan or Tawa*.

-After 4 – 6 seconds turn its side and spread 1 tbspn of ghee on it. Then again turn and spread some ghee on the other half cooked side.

-Turn Frequently until its golden brown and then take it out in a plate.

-So the same with rest of 9.

Learn To Make Paratha 10

-Serve hot with pickle or any curry of your choice.

-And and and do not Forget Lassi.

Outcome:

Lovely, delicious lachhedaar paratha is ready to be served.

Tips:

-Avoid using lots of Flour while rolling.

This will serve 10 persons easily.
