Gulab Jaman

 

Gulab is one of the Favourite mithais of Pakistanis and Indians. They always serve these milk balls in sugar syrup on Happy Occasions. Do try them and let me know your remarks …

Ingredients:

FOR JAMANS:

  • 1 cup dry milk powder
  • ½ cup white Flour
  • ½ cup unsweetened khoya
  • ¼ tspn baking powder
  • Olive oil or ghee 2 tbspns

FOR SHEERA:

  • 2 cups sugar
  • 1 tbspn rose water
  • 1 cup water
  • 4 cardamom pods
  • 1 tspn cardamom powder

Procedure:

-Mix all the ingredients given For jamans except oil or ghee and knead them well to make a dough.

-Now make small balls out of it.

-In a pan boil water and sugar together with constant stirring and add rose water, cardamom powder and cardamom pods in it to give it cardamom essence.

-Heat oil or ghee and stir Fry gulab jamans in it, when golden brown add them to the sugar syrup and cook them For another 5 – 10 minutes to make them sweet.

Outcome:

Tasty gulab jamans are ready to be served. Garnish them with almonds, silver paper and pistachios before serving and serving them hot will be a good idea.

Tips:

-Make small balls.

-Make soft dough.

-Make sheera with constant stirring.

Servings:

This will serve a dozen of people.

Jalebi

Jalebi is one of the most popular mithai of North India, people there use this in breakfast with pooris and khattay aalu but in other parts of India it is used as Mithai, Sweet. Pakistanis also have them on Happy Occasions and in The Month Of Ramadhan, Jalebi is one of the hottest item For Aftari. This is a very tasty Mithai. Ingredients

  • ½ cup all purpose Flour
  • 1 tspn garam Flour
  • ½ tspn sugar
  • ½ tspn oil
  • ½ tspn yeast
  • ½ cup lukewarm water
  • Oil For Frying
  • A pinch of orange Food colour

FOR SHEERA

  • 1 cup sugar
  • ½ cup water
  • 2 cardamom pods
  • A pinch of saffron

Procedure:

-Dissolve yeast n a tbspn of water, then add Flour, garam Flour, sugar, Food colour and oil and mix well.

-Now gradually add water and make a smooth batter. Avoid lumps.

-Keep this mixture covered in a warm place For an hour.

-Meanwhile, in a separate pan  put sugar, saffron and cardamom and then pour water into it and heat it For sheera.

-With constant stirring make a thick liquid and a keep aside to cool.

-Now after an hour pour this mixture into a squeezey ketchup bottle.

-Heat oil For Frying in a deep pan and when its hot squeeze that mixture bottle in a circular motion and make thin, wide circles of that mixture.

-When they are golden brown From both the sides, take them out and put them into that sugar syrup, in other words sheera and serve.

Outcome:

Delicious jalebies are ready to be served.

-Put that Flour mixture in to oil For Frying when its hot.

Servings:

This will serve 4 – 8 persons.
